-mexican rice: usually made with chicken stock
-beans: usually made with bacon and traditionally lard
-mexican dressing: made with eggs or milk
-quesadillas: um... those are made with cheese
-chips: make sure they are made in vegetable oil - otherwise... no.
good suggestions:
-chips & guacamole & salsa: as long as the chips are made in vegetable oil
-mexican salad: have the waiter bring you a meatless salad. dressing: lemon & lime wedges juiced over salad with some oil. avocados on top & sprinkle with a little bit of salt. yummo.
- cheeseless nachos with all the lettuce / tomato / salsa / guacamole... etc
- vegetable fajitas - make sure they are grilled in vegetable oil
